Ingredients
For the Apples
4 medium apples (Honeycrisp, Gala, or Fuji work best)
1 tbsp olive oil

Pinch of salt
Filling
½ cup crumbled feta
¼ cup dried cranberries (or fresh if available)
2 tbsp chopped walnuts or pistachios
1 tbsp honey
1 tsp lemon zest
1 tbsp orange juice (optional, adds brightness)
Instructions
1. Prep the Apples
Preheat oven to 375°F (190°C).
Slice apples in half and scoop out the center (core + seeds) to make a small “well.”
2. Season & Bake
Brush cut sides with olive oil or melted butter.
Drizzle with honey, sprinkle cinnamon + a little salt.
Place apples cut-side up on a baking dish.
Bake 20 minutes until softened but not mushy.
3. Make the Filling
In a bowl, mix:
- Feta
- Cranberries
- Walnuts/pistachios
- Honey
- Lemon zest
- Orange juice (optional)
4. Fill the Apples
Remove apples from the oven.
Spoon feta-cranberry mixture generously into each apple half.
5. Final Bake
