Ingredients
Chicken Marinade:
  1. 2 Chicken Breasts, halved
  2. 2 Tbls Olive Oil
  3. 1 Tsp Garlic Powder
  4. 1 Tsp Onion Powder
  5. 1 Tsp Italian Seasoning
  6. Tomatoes –
  7. Cherry Tomatoes, halved or quartere
  8. 1 Tbls Olive Oi
  9. Fresh Basil Leaves, chopped
  10. Salt & Peppe
  11. Topping
  12. Basil Pesto
  13. Mozzarella Slices
Method:
  1. For the chicken marinade, mix the olive oil, Italian seasoning, garlic and onion powders, salt, and pepper in a small bowl.
  2. Flatten the thick section of the breasts using a meat mallet. Apply the chicken marinade to the breasts.
Tomatoes: Toss tomatoes with chopped basil, olive oil, and salt & pepper.
  3. Chicken & Toss –
  4. Cook the chicken in a skillet with two tablespoons of butter until it is browned on both sides (it’s okay to cook it through since it will finish cooking in the oven).
  5. Then, move it to a baking dish that has been sprayed with cooking spray. Place slices of mozzarella on top of each bird and bake at 200C/400F for about 20 minutes, or until the chicken is cooked through. The amount of time you bake depends on how thick your chicken breasts are.
  6. Take out of the oven. Place about three tablespoons of pesto, a portion of tomatoes, and freshly ground pepper on top of each chicken. Serve right away.
    Have fun!
