Ingredients

Feta Rolls

200 g feta cheese, cut into thick sticks

10–12 sheets phyllo pastry

3 tablespoons olive oil

1 tablespoon fresh parsley or thyme

Freshly cracked black pepper

Orange Chilli Honey Dip

¼ cup honey

Zest of ½ orange

2 tablespoons fresh orange juice

Pinch of chilli flakes (optional & very mild)

½ teaspoon lemon juice

Instructions

1️⃣ Prepare the Dip

In a small saucepan, gently warm honey, orange zest, and orange juice.

Add chilli flakes (optional) and lemon juice.

Simmer 2–3 minutes until slightly thickened.

Remove from heat and set aside.

2️⃣ Assemble the Feta Rolls

Preheat oven to 200°C (400°F).

Place one phyllo sheet on a clean surface and brush lightly with olive oil.

Add a second sheet on top and brush again.

Place a feta stick near the bottom edge, sprinkle with herbs and black pepper.

Fold sides inward and roll tightly like a cigar.

Repeat with remaining phyllo and feta.

3️⃣ Bake

Arrange rolls seam-side down on a lined baking tray.

Brush lightly with olive oil.

Bake 15–18 minutes until golden and crisp.

4️⃣ Serve

Serve hot feta rolls with warm orange chilli honey dip on the side.
