Ingredients:

2 large sweet potatoes, cooked and mashed

¼ cup brown sugar

½ teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon vanilla extract

2 tablespoon solive oil

1 cup crushed cornflakes or panko breadcrumbs

¼ cup chopped pecans or almonds (optional)

1 egg, beaten

Pinch of salt

Cooking spray or oil for baking

Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

In a bowl, combine mashed sweet potatoes with brown sugar, cinnamon, nutmeg, vanilla extract, oil, and a pinch of salt. Mix well.

Scoop about 1 tablespoon of the mixture, roll it into small balls, and set aside.

In a separate bowl, mix the crushed cornflakes (or panko) with chopped nuts.

Dip each sweet potato ball into the beaten egg, then coat with the cornflake/nut mixture.
