Ingredients
For the Sweet Potatoes
2 medium sweet potatoes
1 tsp olive oil
Pinch of salt & pepper
Savory Black Bean Filling
1 tbsp olive oil
1 cup cooked black beans (or 1 can, drained and rinsed)
½ small red onion, chopped
1 clove garlic, minced
½ tsp cumin
½ tsp smoked paprika
¼ tsp chili flakes
Salt & pepper to taste
¼ cup corn
Zesty Lime Crema
⅓ cup Greek yogurt (or sour cream)
½ lime — juice + zest
½ tsp honey
Pinch of salt
Toppings
Chopped cilantro
Diced tomato
Sliced avocado
Lime wedges
Instructions
1. Bake the Sweet Potatoes
Preheat oven to 220°C (425°F).
Wash and dry sweet potatoes.
Rub with olive oil, salt, and pepper.
Pierce each potato 3–4 times with a fork.
Bake 40–45 minutes, until soft and creamy inside.
2. Make the Savory Black Beans
Heat olive oil in a pan over medium heat.
Add onion and cook until soft.
Add garlic, cumin, smoked paprika, and chili flakes (optional).
Add black beans + corn (if using).
Season with salt and pepper.
Cook for 4–5 minutes until warm and flavorful.
3. Prepare the Zesty Lime Crema
In a bowl, mix Greek yogurt, lime juice, lime zest, honey, and salt.
Taste and adjust lime or honey as needed.
Keep chilled until serving.
4. Assemble
Slice baked sweet potatoes lengthwise (don’t cut fully through).
Fluff the inside with a fork.
Fill with the warm black bean mixture.
Drizzle generously with lime crema.
Add toppings: tomatoes, avocado, cilantro, extra lime.
NOTES
For a non-spicy version: skip chili flakes.
Can replace black beans with chickpeas.
Add grated cheese if you want it more savory.
Works great as meal prep — lasts 3 days in fridge.
