Take your corn on the cob to the next level with creamy feta, fiery chilli and smoky char from the BBQ.
Ingredients for BBQ Corn On The Cob with Feta & Chilli
4 large sweetcorn cobs
20 grams butter
1 quarters bunch parsley, fresh, leaves picked, chopped
2 cloves garlic, peeled and minced
1 large red chilli, diced
1 tbs olive oil
100g feta, crumbled
1/2 zested 1 medium lime, 1/2 chopped into wedges, 1/2 zested
Method to BBQ Corn On The Cob with Feta & Chilli
Place the butter in a bowl with the parsley, chilli and garlic and mix well.
Heat the barbecue on the highest setting. Brush the cobs with oil and cook for 8-10 minutes, turning often, until slightly charred.
Brush on the parsley butter (reserve a little for serving) and cook for 1 more minute.
Place the cobs on a plate, top with the remaining butter, feta and lime zest and serve.
