Ingredients

Pancakes

2 large eggs

Instructions

1️⃣ Make the Batter

In a bowl, mix cottage cheese, eggs, and vanilla until smooth.

Add flour, baking powder, and salt. Stir to combine.

Gently fold in blueberries.

2️⃣ Cook the Pancakes

Heat a non-stick pan over medium heat.

Add a small amount of butter or oil.

Spoon batter into pancakes (approx. ¼ cup each).
