½ teaspoon onion powder

Salt and pepper, to taste

1 tablespoon olive oil (for searing)

Instructions

1. Prep Chicken:

Butterfly the chicken breasts and cut them in half to make 4 thin fillets.

Place each piece between plastic wrap and gently pound with a mallet to an even thickness (about ¼ inch).

2. Make the Filling:

In a bowl, mix together:

Chopped broccoli

Cheddar cheese

Cream cheese (if using)

Garlic, onion powder, salt, and pepper

3. Stuff and Roll:

Spread 2 tablespoons of the broccoli-cheddar mixture onto each fillet.

Roll up tightly, starting from the short end.

Secure with toothpicks or tie with kitchen twine.
