1 large burrata ball (about 200g / 7 oz)
1 whole head of garlic
2 tbsp extra virgin olive oil (plus more for drizzle)
2 tbsp Greek yogurt or sour cream
½ tsp lemon zest
1 tsp lemon juice
Salt & freshly ground black pepper, to taste
Fresh herbs (parsley, basil, or chives), chopped for garnish
For the Pita Chips
4 pita breads
3 tbsp olive oil
½ tsp dried oregano
½ tsp sea salt
Instructions
1. Roast the Garlic
Preheat oven to 190°C (375°F).
Slice the top off a garlic head, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes until soft and golden.
Let cool slightly, then squeeze out the roasted cloves.
2. Make the Dip
In a blender or food processor, combine burrata, roasted garlic cloves, olive oil, lemon zest, lemon juice, and yogurt (if using).
Blend until smooth and creamy.
Taste and adjust with salt, pepper, or extra lemon juice.
3. Prepare the Pita Chips
Cut pita breads into triangles.
Toss with olive oil, oregano/za’atar, and salt.
Arrange on a baking sheet and bake at 190°C (375°F) for 10–12 minutes, flipping halfway, until golden and crisp.
4. Assemble & Serve
Transfer dip to a shallow bowl.
Drizzle with olive oil, sprinkle with herbs, and serve warm pita chips on the side.
