Cabbage & Egg Breakfast Rolls

 Description

Simple, budget-friendly, and surprisingly delicious — crispy on the outside, soft inside, and perfect for a quick healthy breakfast!


 Ingredients

  • 1 tbsp butter or olive oil (or a mix of both)
  • 1 garlic clove, minced
  • 2–3 cups cabbage, finely shredded (use more for rolls like in image)
  • 2 eggs, lightly beaten
  • Salt & black pepper to taste
  • Optional:
    • ¼ cup cheese (for extra flavor 🧀)
    • Green onions or herbs

 Instructions

1. Cook cabbage

  • Heat butter/oil in a pan over medium heat
  • Add garlic → sauté 30 seconds
  • Add shredded cabbage
  • Cook for 5–7 minutes until softened

2. Add eggs

  • Pour beaten eggs over cabbage
  • Mix well so eggs coat everything
  • Cook until eggs are fully set

3. Cool slightly

  • Let mixture cool for a few minutes (helps with shaping)

4. Shape rolls

  • Take small portions
  • Shape into log/roll shapes like in the image

5. Pan-fry

  • Heat a little oil in pan
  • Fry rolls 3–4 minutes per side until golden and crispy

6. Serve

  • Serve hot with yogurt dip, garlic sauce, or ketchup
