  1.  ½ cup cubed bread
  2.  Extra-virgin olive oil, for drizzling
  3.  2 bunches romaine lettuce, chopped
  4.  Homemade Caesar Dressing
  5.  2 radishes, thinly sliced
  6. 1½ cups Roasted Chickpeas
  7. ⅓ cup shaved pecorino or Parmesan cheese
  8.  2 tablespoons chopped chives
  9.  2 tablespoons toasted pine nuts
  10.  Sea salt and freshly ground black pepper, to taste

Instructions

1. Preheat your oven to 375°F (190°C). Spread the cubed bread on a baking sheet, drizzle with a little extra-virgin olive oil, and bake for 10-12 minutes or until golden and crispy. Set aside to cool.
2. Assemble the romaine on a platter.
