Caramelized Delicata Squash with Burrata & Hot Honey Cranberry Glaze
This dish combines roasted, caramelized delicata squash with creamy burrata, topped with a sticky-sweet cranberry honey glaze. The flavors balance beautifully — warm squash, tart cranberries, floral honey, and the cool richness of burrata. It looks elegant but is very simple to make.
⏱ Time
Prep Time: 10 minutes
Cook Time: 25–30 minutes
Total Time: 35–40 minutes
Ingredients
For the squash:
2 medium delicata squash
2 tbsp olive oil
1 tbsp maple syrup or honey
½ tsp salt
¼ tsp black pepper
½ tsp dried thyme or rosemary
Optional: ¼ tsp smoked paprika for color (non-spicy)
For the cranberry hot honey glaze:
½ cup fresh or frozen cranberries
2 tbsp honey
1 tbsp orange juice (or lemon juice)
1 tbsp water
¼ tsp orange zest
Pinch of salt
Optional mild heat: 2–3 drops hot sauce or a pinch of chili flakes (use only if you want it slightly spicy; keep it out for non-spicy)
To serve:
1–2 balls fresh burrata
2 tbsp toasted pistachios or walnuts (crushed)
Fresh thyme for garnish
Extra honey for drizzling
Instructions
1. Prep the delicata squash
1. Preheat oven to 425°F (220°C).
2. Wash squash thoroughly — delicata skin is edible.
3. Cut in half lengthwise, scoop out seeds, and slice into ½-inch rings.
4. Toss slices with olive oil, maple/honey, salt, pepper, and herbs.
2. Roast & caramelize
1. Spread squash on a baking sheet in a single layer.
2. Roast 20–25 minutes, flipping halfway, until edges are caramelized and golden.
3. Let cool slightly before plating.
3. Make the cranberry hot honey glaze
1. In a small saucepan, combine: cranberries, honey, orange juice, water, orange zest, and salt.
2. Simmer on medium heat for 5–7 minutes until berries burst and mixture becomes syrupy.
3. For a smoother glaze, lightly mash cranberries with a spoon.
4. If you want very mild heat, add a pinch of chili flakes at the end (optional).
5. Remove from heat — glaze will thicken as it cools.
4. Assemble
1. Arrange roasted delicata squash on a serving plate.
2. Tear burrata gently and place on top or on the side.
3. Spoon warm cranberry glaze over the squash.
4. Sprinkle toasted nuts.
5. Drizzle a little honey and garnish with fresh thyme
Notes
Delicata squash skin stays soft — no peeling required.
You can use butternut squash if delicata is unavailable (just peel).
For a brighter flavor, add a splash of balsamic vinegar to the glaze.
Tips
Roast squash until edges are deeply golden for best caramelization.
Add a handful of arugula to turn this into a warm salad.
For extra richness, drizzle basil oil or herb oil.
❓ Frequently asked questions FAQ
Q: Can this be made ahead?
Yes. Roast squash and pepare glaze ahead. Reheat gently before serving and add burrata last.
Q: What can I use instead of burrata?
Fresh mozzarella or whipped ricotta works well.
Q: Is the glaze sweet or tart?
Perfectly balanced — honey sweetens while cranberries add brightness.
