Ingredients

3 medium sweet potatoes, peeled & cubed

2 large onions, thinly sliced

3 tbsp olive oil

½ tsp salt (or to taste)

¼ tsp black pepper

½ tsp dried thyme or rosemary

2–4 tbsp warm milk or vegetable broth (as needed)

Optional finish: goat cheese or Greek yogurt

Instructions

1️⃣ Cook Sweet Potatoes

Add sweet potatoes to salted boiling water

Cook 15–18 minutes until very tender

Drain well and steam-dry 2 minutes

2️⃣ Caramelize Onions

Heat 2 tbsp olive oil in a wide pan over medium-low heat

Add onions and a pinch of salt

Cook 20–25 minutes, stirring occasionally, until deep golden and jammy

Stir in thyme and butter (if using)

3️⃣ Mash

Mash sweet potatoes with remaining olive oil

Add warm milk/broth gradually until creamy

Fold caramelized onions through mash
