Cheesy Baked Potato Casserole
🧾 Ingredients
- 4–5 medium potatoes (thinly sliced or grated)
- 1 small onion (finely chopped)
- 2–3 cloves garlic (minced)
- 4 eggs
- 1 cup milk (or cream for richer taste)
- 1½ cups shredded cheese (mozzarella, cheddar, or mix)
- 2 tbsp butter or oil
Seasoning:
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp paprika
- 1 tsp dried herbs (parsley/oregano)
- Optional: chili flakes
👨🍳 Instructions
- Preheat oven
- 180°C (350°F)
- Prepare potatoes
- Slice very thin (or grate for softer texture).
- If sliced, you can parboil for 5 minutes (optional, speeds cooking).
- Make egg mixture
- In a bowl, whisk eggs + milk + garlic + seasoning.
- Assemble
- Grease a baking dish.
- Layer potatoes and onions evenly.
- Pour egg mixture over.
- Top with shredded cheese.
- Bake
- Bake for 40–50 minutes until golden and set in the center.
- Rest & serve
- Let it sit 10 minutes before cutting (helps it hold shape).
