Ingredients

1 large cauliflower head

2 tbsp olive oil

½ tsp garlic powder

½ tsp smoked paprika

½ tsp salt

¼ tsp black pepper

1 cup shredded cheese (cheddar, mozzarella, Parmesan, or a mix)

¼ cup grated Parmesan (optional, for extra crispiness)

1 tbsp fresh parsley or chives, chopped (for garnish)

Instructions

Step 1: Prepare the Cauliflower

1. Preheat your oven to 400°F (200°C).

2. Remove the outer leaves of the cauliflower and trim the stem slightly (keep the core intact).

3. Slice the cauliflower into ¾-inch thick “steaks”. You should get about 2-3 good steaks from one head.

Step 2: Season and Roast

1. Place the cauliflower steaks on a lined baking sheet.

2. Brush both sides with olive oil

3. Sprinkle garlic powder, smoked paprika, salt, and black pepper evenly over each steak.

4. Roast for 20-25 minutes, flipping halfway through, until golden brown and tender.

Step 3: Add the Cheese

1. Remove the cauliflower from the oven and sprinkle shredded cheese over the top of each steak.

2. If using Parmesan, sprinkle it now for extra crispiness.

3. Return to the oven and bake for another 5 minutes, until the cheese is melted and bubbly.

Step 4: Serve

1. Remove from the oven and garnish with fresh parsley or chives.

2. Serve immediately as a main dish or a side.
