Ingredients
For the crepes:
1 cup all-purpose flour
2 large eggs
1 ½ cups milk
Pinch of salt

1 tbsp olive oil
1 small onion (finely chopped)
2 cloves garlic (minced)
1 medium zucchini (grated and squeezed to remove excess water)
2 cups cooked chicken breast (shredded)
½ cup cream cheese (softened)
½ cup mozzarella cheese (shredded)
¼ cup Parmesan cheese (grated)
Salt & black pepper, to taste
2 tbsp fresh parsley (chopped)

Instructions
Make the crepes:
1. In a bowl, whisk flour, eggs, milk, melted butter, and salt until smooth (or blend in a blender).
2. Heat a nonstick skillet, lightly grease with olive oil.
3. Pour about ¼ cup batter, swirl pan to coat thinly.
4. Cook 1–2 minutes per side until lightly golden. Stack on a plate.
Make the filling:
1. Heat olive oil in a skillet, sauté onion until soft. Add garlic, cook 1 minute.
2. Stir in grated zucchini and cook 3–4 minutes to release moisture.
3. Add shredded chicken, cream cheese, mozzarella, Parmesan, salt, and pepper. Stir until creamy. Remove from heat, mix in parsley.
Assemble:
1. Place 2–3 tbsp filling on each crêpe, roll or fold into triangles.
2. Arrange in a buttered baking dish. If desired, sprinkle with extra cheese.
3. Bake at 180°C (350°F) for 10–12 minutes until cheese melts.
