Salt & black pepper, to taste

2 tbsp parsley, chopped

For the Bruschetta

1 baguette or ciabatta, sliced into 12 pieces

2 tbsp olive oil

1 cup shredded mozzarella (or Gruyere, provolone, or a cheese blend)

¼ cup grated Parmesan

Optional: drizzle of balsamic glaze for serving

Instructions

Toast the Bread

Preheat oven to 200°C (400°F).

Arrange bread slices on a baking sheet, brush with olive oil, and toast for 5–6 minutes until lightly golden.

Cook the Mushrooms

Heat butter and olive oil in a pan over medium heat.

Add garlic, cook for 30 seconds until fragrant.

Add mushrooms, thyme, salt, and pepper. Saute 6–8 minutes until golden and tender.

Stir in parsley, remove from heat.

Assemble Bruschetta

Top each toasted bread slice with a spoonful of the mushroom mixture.
