Ingredients
Vegetables
2 medium potatoes, thinly sliced
2 zucchini, sliced
½ onion, finely chopped
2 cloves garlic, minced

3 eggs
½ cup milk or cream
½ cup sour cream or Greek yogurt
½ tsp salt
¼ tsp black pepper
½ tsp dried oregano
Topping
1 cup shredded mozzarella or cheddar
¼ cup grated parmesan
2 tbsp breadcrumbs (optional)
1 tbsp chopped parsley
Instructions
1. Preheat Oven
Preheat oven to 190°C (375°F) and lightly grease a baking dish.
2. Prepare the Vegetables
Slice the potatoes and zucchini thinly.
Sauté onion and garlic in a small pan with a little oil for 2–3 minutes until fragrant.
3. Make the Creamy Mixture
In a bowl whisk together:

sour cream
salt
pepper
oregano
4. Assemble the Casserole
Layer potatoes and zucchini in the baking dish.
Add sautéed onions and garlic between layers.
Pour the creamy mixture evenly over the vegetables.
5. Add Cheese
Sprinkle mozzarella, parmesan, and breadcrumbs on top.
6. Bake
Bake for 35–40 minutes until the vegetables are tender and the cheese is golden and bubbly.
7. Serve
Let the casserole cool for 5–10 minutes, then garnish with chopped parsley and slice.
