Ingredients
For the Chicken & Marinade:
4 bone-in, skin-on chicken thighs
4 drumsticks
3 cloves garlic, minced
2 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp dried oregano
1 tsp smoked paprika
½ tsp garlic powder
Salt & pepper, to taste
For the Potatoes:
4 large Russet or Yukon Gold potatoes, cut into wedges
2 tbsp olive oil
1 tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp dried thyme or rosemary
Salt & pepper, to taste
Optional Garnish:
Fresh parsley, chopped

Instructions
Marinate the Chicken
In a large bowl, mix garlic, olive oil, lemon juice, oregano, paprika, garlic powder, salt & pepper.
Add chicken, toss to coat, & marinate for 30 min–4 hours.
Prepare the Potatoes
Preheat oven to 425°F (220°C).
Toss potatoes with olive oil, paprika, garlic & onion powder, thyme, salt & pepper.
Assemble & Roast
Arrange chicken skin-side up on a rimmed baking sheet.
Spread potatoes around the chicken in a single layer.
Roast for 40-50 min, flipping potatoes halfway through.
Crisp & Broil (Optional)
For extra crispy skin, broil for 3-5 min at the end, watching closely.
Garnish & Serve
Sprinkle with fresh parsley & serve with lemon wedges for a bright finish!
