Chicken & Halloumi Flatbread with Avocado and Chili Honey

Ingredients
Chicken
2 chicken breasts (or thighs), sliced into strips
2 tbsp olive oil
2 cloves garlic, minced
1 tsp smoked paprika
½ tsp dried oregano
Juice of ½ lemon
Salt & black pepper, to taste
Halloumi & Flatbread
200g halloumi cheese, sliced into thick strips
4 flatbreads or pita (store-bought or homemade)
Olive oil, for brushing
Fresh Layers
1 ripe avocado, sliced
1 cup arugula or baby spinach
½ small red onion, thinly sliced
Fresh herbs (parsley or mint), chopped
Chili Honey
3 tbsp honey
1 tsp chili flakes (or more if you like heat)
½ tsp smoked paprika (optional)
Pinch of sea salt
Instructions
1. Marinate the Chicken
In a bowl, combine chicken strips with olive oil, garlic, smoked paprika, oregano, lemon juice, salt, and pepper.
Let sit at least 15 minutes (or up to 2 hours for deeper flavor).
2. Cook the Chicken
Heat a skillet or grill pan over medium-high heat.
Cook chicken 6–8 minutes, turning until golden and fully cooked.
Set aside.
3. Cook the Halloumi
In the same pan, sear halloumi slices for 1–2 minutes per side until golden and crispy.
4. Make Chili Honey
Warm honey in a small pan (or microwave for 10–15 sec).
Stir in chili flakes, smoked paprika, and a pinch of salt.
5. Assemble Flatbreads
Warm flatbreads and brush lightly with olive oil.
Layer arugula, grilled chicken, halloumi, avocado, and red onion.
Drizzle generously with chili honey.
Finish with fresh parsley or mint.
6. Serve
Enjoy open-faced like a pizza or folded like a wrap.
