Ingredients:

  1. 2 tablespoons olive oil
  2.  1 lb (450 g) chicken breast, thinly sliced
  3.  2 tablespoons soy sauce
  4.  1 tablespoon oyster sauce
  5.  1 tablespoon hoisin sauce
  6.  1 teaspoon sesame oil
  7.  3 cups cabbage, thinly sliced
  8.  1 cup carrots, julienned
  9.  1/2 cup bell pepper, sliced
  10.  1/2 cup onion, thinly sliced
  11.  2 cloves garlic, minced
  12.  1-inch piece of ginger, minced
  13.  1/4 cup green onions, chopped
  14.  8 oz (225 g) chow mein noodles (or any thin egg noodles)
  15. 1/2 cup chicken broth
  16.  Salt and pepper to taste

Instructions:
1. Cook the chow mein noodles according to the package instructions.
2. Once done, drain and set aside.
3. In a bowl, marinate the thinly sliced chicken in 1 tablespoon of soy sauce and set it aside for about 10-15 minutes.
4. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
5. Add the marinated chicken and stir-fry for about 5-6 minutes until it is cooked through and lightly browned.
6. Remove the chicken from the skillet and set it aside.
7. In the same skillet, add the remaining 1 tablespoon of olive oil.
8. Add the garlic, ginger, onion, bell pepper, carrots, and cabbage.
9. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
10. Return the cooked chicken to the skillet with the vegetables.
11. Add the cooked noodles, chicken broth, oyster sauce, hoisin sauce, sesame oil, and the remaining 1 tablespoon of soy sauce.
12. Toss everything together and stir-fry for an additional 2-3 minutes, allowing the noodles to soak up the sauce and the ingredients to heat through.
13. Garnish with chopped green onions and season with salt and pepper to taste.
14. Serve hot.
