Ingredients

For the Chicken Fajitas:

1 lb boneless skinless chicken breast or thighs, thinly sliced

1 tbsp olive oil

1 tsp chili powder

1 tsp cumin

½ tsp smoked paprika

½ tsp garlic powder

¼ tsp onion powder

¼ tsp oregano

Salt & pepper, to taste

Juice of 1 lime

For the Veggies:

1 red bell pepper, sliced

1 yellow or orange bell pepper, sliced

1 small red onion, sliced

1 tbsp olive oil

Pinch of salt

For the Salad Base:

5–6 cups chopped romaine, mixed greens, or spinach

1 avocado, sliced

½ cup cherry tomatoes, halved

¼ cup corn (fresh, grilled, or frozen & thawed)

¼ cup black beans

Lime wedges, for serving

Fresh cilantro, for garnish

Creamy Avocado Lime Dressing:

½ avocado

¼ cup Greek yogurt or sour cream

Juice of 1 lime

1 tbsp olive oil

1 tbsp water

1 garlic clove

1 tbsp chopped cilantro

Salt & pepper, to taste

Instructions

1. Season and Cook Chicken

Toss sliced chicken with olive oil, lime juice, and all the spices. Heat a skillet over medium-high and cook chicken until golden and cooked through (about 6–8 minutes). Remove and set aside.

2. Saute Peppers and Onions

In the same pan, add olive oil, then cook the bell peppers and onion until tender and lightly charred, about 5–7 minutes.

3. Assemble the Salad

Divide greens into bowls. Top with cooked chicken, sauteed peppers and onions, avocado slices, tomatoes, corn, black beans (if using), and cilantro.

4. Dress and Serve

Drizzle with avocado lime dressing or your favorite vinaigrette. Serve with lime wedges on the side.
