Ingredients For Chicken Fiesta Salad:

  • Two halves of skinless, boneless chicken breast
  • One packet (1.27 oz) of dried fajita seasoning, divided
  • One tablespoon of vegetable oil
  • One fifteen-ounce can of rinsed and drained black beans
  • One eleven-oz can of Mexican-style corn
  • ½ cup salsa
  • One packet (10 ounces) of mixed salad greens
  • One sliced onion
  • One tomato, sliced into halves

Instructions For Chicken Fiesta Salad:

  • Evenly coat the chicken with half of the fajita seasoning. Cook the chicken for 8 minutes on each side, or until the juices run clear, in a skillet with hot oil over medium heat. Then, remove and set aside.
  • Combine the beans, corn, salsa and remaining half of the fajita seasoning in a large pot. Warm up using a medium heat setting.
  • Toss the greens, tomato, and onion to make the salad. Place chicken on top of the salad and drizzle with the bean and corn mixture.

This salad is a veritable carnival for the senses thanks to the mix of veggies, chicken, and sweet dressing.
