Ingredients
For the Chicken & Marinade:
1 lb boneless, skinless chicken breast or thighs, thinly sliced
1 tablespoon soy sauce
1 teaspoon cornstarch
½ teaspoon sesame oil
For the Lo Mein Sauce:
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 tablespoon dark soy sauce (for deeper color, optional)
1 teaspoon sugar
1 teaspoon rice vinegar
½ teaspoon sesame oil
1 tablespoon water
For the Noodles & Stir-Fry:
8 oz lo mein noodles (or spaghetti/egg noodles)
2 tablespoons vegetable oil
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
1 cup carrots, julienned
1 cup bell peppers, sliced
1 cup snap peas or broccoli florets
½ cup sliced mushrooms (optional)
2 green onions, chopped
½ teaspoon red pepper flakes (optional, for spice)
Instructions
Step 1: Marinate the Chicken
1. In a bowl, mix sliced chicken with soy sauce, cornstarch, and sesame oil.
2. Let marinate for at least 10 minutes while preparing other ingredients.
Step 2: Cook the Noodles
1. Boil noodles according to package instructions until just tender (al dente).
2. Drain, rinse with cold water, and toss with a little oil to prevent sticking.
Step 3: Make the Lo Mein Sauce
1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, dark soy sauce (if using), sugar, rice vinegar, sesame oil, and water.
Step 4: Stir-Fry the Chicken & Vegetables
1. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
2. Add marinated chicken and cook for 4-5 minutes until browned and cooked through. Remove and set aside.
3. Add remaining 1 tablespoon oil to the pan. Stir-fry garlic and ginger for 30 seconds until fragrant.
4. Add carrots, bell peppers, snap peas, and mushrooms. Stir-fry for 3-4 minutes until slightly tender.
Step 5: Combine Everything
1. Return cooked chicken to the pan.
2. Add noodles and pour in the lo mein sauce. Toss everything together over medium heat for 2 minutes until well coated and heated through.
3. Stir in green onions and red pepper flakes (if using).
Step 6: Serve & Enjoy!
Serve immediately with extra sesame seeds or chili flakes if desired.
