Ingredients:
For the Chicken Scampi:
2 chicken breasts (boneless, skinless, thinly sliced)
2 tbsp olive oil
3 tbsp
5 cloves garlic (minced)
½ tsp crushed red pepper flakes
½ cup chicken broth (or dry white wine)
Juice of 1 lemon (plus zest)
2 tbsp chopped fresh parsley
Salt & black pepper to taste

For Garlic Parmesan Rice:
1 cup long grain white rice (or jasmine)
1 tbsp olive oil
2 cloves garlic (minced)
2 ¼ cups chicken broth
½ cup grated Parmesan cheese

Instructions:Garlic Parmesan Rice:
Sauté garlic: In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
Toast rice: Add rice and stir for 2–3 minutes until lightly toasted.
Simmer: Add chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes or until rice is tender.
Finish: Stir in butter and Parmesan cheese. Season with salt and pepper. Keep warm.
Chicken Scampi:
Season & sear: Season chicken with salt and pepper. In a skillet, heat olive oil over medium-high heat. Add chicken and cook until golden and fully cooked (about 5–6 mins). Set aside.
Make scampi sauce: In the same skillet, melt butter. Add garlic and red pepper flakes. Cook 30 seconds.
Deglaze: Pour in broth (or wine), lemon juice, and zest. Simmer for 2–3 minutes.
Cmbine: Return chicken to pan. Simmer for 2 more minutes to coat. Sprinkle with parsley.
To Serve:
Plate garlic parmesan rice, top with scampi chicken, drizzle pan sauce over everything, and garnish with extra Prmesan and parsley.
