Ingredients (Serves 4)
1 tbsp avocado oil (divided)
2 cloves garlic, minced
2 tsp ginger, minced
340 g (12 oz) sugar snap peas (strings removed and trimmed if necessary)
1 large bell pepper, cut into strips
450 g (1 lb) chicken thighs, cut into bite-sized pieces
80 ml (⅓ cup) soy sauce
80 ml (⅓ cup) water
1 tbsp corn starch
4 tbsp (¼ cup) chopped scallions
Instructions:
Prepare the Sauce:
In a small bowl, mix together the soy sauce, water, and corn starch. Stir until smooth, then set aside.
Cook the Vegetables:
Heat ½ tbsp avocado oil in a large skillet or wok over medium-high heat.
Add the garlic and ginger, cooking for 30 seconds until fragrant.
Toss in the sugar snap peas and bell pepper, stirring frequently for 2–3 minutes until slightly tender but still crisp. Remove from the skillet and set aside.
Cook the Chicken:
In the same skillet, heat the remaining ½ tbsp avocado oil.
Add the chicken thighs and cook for 5–6 minutes, stirring occasionally, until fully cooked and golden brown on the outside.
Combine:
Return the vegetables to the skillet with the cooked chicken.
Pour the prepared sauce over the mixture and stir to combine. Cook for 2–3 minutes, stirring frequently, until the sauce thickens and coats the chicken and vegetables.
Garnish and Serve:
Sprinkle with the chopped scallions.
Serve immediately over steamed rice, quinoa, or noodles if desired.
