Ingredients
For the Chicken Soulvaki:
1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon oregano (dried or fresh)
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
½ teaspoon ground cumin (optional, for extra depth)
1 teaspoon red wine vinegar
For the Tzatziki Sauce:
1 cup Greek yogurt
½ cucumber, grated and squeezed dry
1 tablespoon lemon juice
1 tablespoon olive oil
1 clove garlic, minced
1 teaspoon dill (fresh or dried)
½ teaspoon salt
For the Wraps:
4 Greek-style pita breads (or flatbreads)
½ red onion, thinly sliced
½ cucumber, diced
1 medium tomato, diced
½ cup lettuce, shredded (optional)
¼ cup feta cheese, crumbled
1 tablespoon fresh parsley, chopped
Instructions
1. Marinate the Chicken:
In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, pepper, paprika, cumin, and red wine vinegar.
Add the chicken pieces, toss to coat, and marinate for at least 30 minutes (or overnight for best flavor).
2. Cook the Chicken:
Heat a grill pan or skillet over medium-high heat.
Cook chicken for 4-5 minutes per side, or until golden brown and fully cooked (165°F internal temp).
Remove from heat and let rest for 5 minutes.
3. Make the Tzatziki Sauce:
In a bowl, mix Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, and salt.
Refrigerate for 15 minutes to allow flavors to blend.
4. Assemble the Pita Wraps:
Warm the pita bread on a dry pan or grill for 30 seconds per side.
Spread tzatziki sauce on each pita.
Add grilled chicken, red onion, cucumber, tomato, lettuce, and feta cheese.
Garnish with fresh parsley and fold into a wrap.
