Chicken Tikka Fried Rice is a flavorful fusion dish that combines the bold, smoky flavors of Indian chicken tikka with the comforting, savory taste of fried rice. This dish is perfect for a quick yet satisfying meal, combining marinated, grilled chicken tikka with aromatic basmati rice, vegetables, and seasonings.
Ingredients
For Chicken Tikka Marinade:
250g boneless chicken (cubed)
½ cup thick yogurt
1 tbsp lemon juice
1 tbsp ginger-garlic paste
1 tsp red chili powder
½ tsp turmeric powder
1 tsp cumin powder
1 tsp garam masala
½ tsp black pepper powder
1 tsp coriander powder
1 tbsp oil
Salt to taste
½ tsp kasuri methi (dried fenugreek leaves) – optional
Red food color (optional)
For Fried Rice:
2 cups cooked basmati rice (preferably a day old)
2 tbsp olive oil )
1 small onion (finely chopped)
½ cup bell peppers (mixed colors, diced)
½ cup carrots (finely chopped)
½ cup green peas
1 tsp soy sauce
1 tbsp tomato ketchup
1 tsp chili sauce (optional)
½ tsp garam masala
1 tsp cumin seeds
½ tsp black pepper
2 cloves garlic (finely minced)
1 tbsp fresh coriander (chopped)
Salt to taste
Instructions
Step 1: Marinate and Cook the Chicken Tikka
In a bowl, mix yogurt, lemon juice, ginger-garlic paste, chili powder, turmeric, cumin, garam masala, black pepper, coriander powder, salt, kasuri methi, and oil. Add red food color if using.
Add the chicken cubes to the marinade and coat well. Cover and refrigerate for at least 1 hour (overnight for best flavor).
Grill the marinated chicken on a grill pan, air fryer, or oven at 200°C (400°F) for 12-15 minutes, turning halfway until fully cooked and slightly charred. Set aside.
Step 2: Prepare the Fried Rice
Heat oil in a large pan or wok over medium heat. Add cumin seeds and let them .
Add garlic and sauté for a few seconds until fragrant.
Add chopped onions and stir-fry until they turn translucent.
Toss in carrots, bell peppers, and peas. Stir-fry for 2-3 minu
tes until slightly tender.
Add the grilled chicken tikka pieces and mix well.
