Chili Garlic Mushrooms
A quick and spicy dish bursting with flavors, chili garlic mushrooms make a fantastic appetizer or side dish.

Ingredients:
Mushrooms: 250g (button or cremini), cleaned and quartered
Garlic: 4-5 cloves, finely chopped
Red chili flakes: 1-2 teaspoons (adjust to taste)
Soy sauce: 2 tablespoons
Sriracha or chili sauce: 1 tablespoon
Oyster sauce: 1 tablespoon (optional for added umami)
Sugar: 1/2 teaspoon (optional)
Vinegar: 1 teaspoon
Oil: 2 tablespoons (olive or sesame oil)
Spring onions: 2-3, chopped (for garnish)
Cilantro: A handful, chopped (optional garnish)
Salt and black pepper: To taste
Instructions:
Prepare the Mushrooms
Clean and pat the mushrooms dry. Quarter them or slice them thickly for even cooking.
Heat the Oil
In a wok or large skillet, heat the oil over medium-high heat until shimmering.
Saute Garlic and Chili Flakes
Add the chopped garlic and chili flakes. Stir-fry for about 30 seconds until fragrant. Be careful not to burn the garlic.
Cook the Mushrooms
Add the mushrooms to the pan. Stir well to coat them in the garlic-chili mixture.
Cook for 5-7 minutes, stirring occasionally, until the mushrooms release their water and begin to brown.
Add the Sauces
Lower the heat slightly and add soy sauce, sriracha, oyster sauce (if using), sugar, and vinegar. Stir to combine.
Let the mushrooms cook for another 2-3 minutes until the sauce thickens slightly and coats the mushrooms.
Season and Garnish
Taste and adjust seasoning with salt and pepper as needed.
Remove from heat and garnish with chopped spring onions and cilantro, if desired.
