Ingredients
For the couscous base:
¾ cup pearl couscous (Israeli couscous)
1½ cups water
Pinch of salt
1 tsp olive oil
Toppings:
4–6 fresh figs, halved or quartered (or use dried figs, chopped, if out of season)
1 cup arugula or baby spinach
¼ cup crumbled feta cheese
2 tbsp walnuts or almonds, toasted & chopped
1 tbsp fresh mint or basil, chopped
Optional: A few thin red onion slices
Honey-Balsamic Vinaigrette:
1 tbsp balsamic vinegar
1 tsp honey
2 tbsp olive oil
Salt and black pepper to taste
Instructions:
1. Cook the pearl couscous:
In a saucepan, bring water to a boil with a pinch of salt and olive oil.
Stir in couscous, lower heat, cover, and simmer for ~10 minutes until tender.
Drain if needed, fluff with a fork, and chill completely.
2. Make the vinaigrette:
In a small bowl, whisk balsamic vinegar, honey, olive oil, salt, and pepper.
3. Assemble the salad:
In a bowl, combine chilled couscous, arugula, figs, and red onion (if using).
Drizzle with vinaigrette and toss gently.
4. Top and finish:
Add crumbled feta, toasted nuts, and fresh herbs.
Drizzle a little more honey on top if you love sweet contrast.
Tips:
- Can’t find figs? Use halved grapes, pomegranate seeds, or sliced stone fruits like plums or peaches.
- Want it heartier? Add grilled chicken or salmon on top.
- Use baby kale if arugula is too peppery for your taste.
