 Ingredients:

2 tablespoons chopped cilantro

Juice of ½ lime

1 can black beans, rinsed and heated

1 cup chopped lettuce

½ cup diced tomatoes or pico de gallo

¼ cup shredded cheese

Sour cream or chipotle-lime crema

 Instructions:

1. Cook the Rice:

Rinse rice. Boil in salted water until fluffy. Stir in lime juice, cilantro, and olive oil.

2. Cook the Protein:

Season chicken or beef with spices. Cook in a skillet over medium-high heat until browned and cooked through, 6–8 minutes. Let rest, then slice or shred.

3. Make the Corn Salsa:

Mix corn, onion, cilantro, lime juice, and salt in a bowl. Chill.
