Chipotle Chicken Burrito Bowl
Ingredients
For the Chipotle Chicken:
- 1 lb boneless, skinless chicken breasts or thighs
- 2 tsp chipotle chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 2 cloves garlic, minced
- 2 tbsp lime juice
- 1 tbsp olive oil
For the Bowl:
- 2 cups cooked rice (white, brown, or cilantro-lime rice)
- 1/2 cup black beans, rinsed and drained
- 1/2 cup roasted or steamed corn
- 1/2 cup diced tomatoes or pico de gallo
- 1/2 cup shredded lettuce or spinach
- 1 avocado, sliced
Optional Garnishes:
- 1/4 cup shredded cheddar or Monterey Jack cheese
- Sliced jalapeños
- Fresh cilantro, chopped
- Lime wedges
- Greek yogurtor chipotle mayo
Instructions
Marinate and Cook the Chicken:
- In a bowl, mix chipotle chili powder, cumin, smoked paprika, minced garlic, lime juice, olive oil, salt, and pepper. Add the chicken and coat evenly. Let marinate for at least 20 minutes.
- Heat a grill or skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice into strips.
Prepare the Bowl Ingredients:
- Cook rice according to package instructions. Add lime juice and chopped cilantro for extra flavor if desired
- Roast or steam the corn and prep other toppings like shredded lettuce, diced tomatoes, black beans, and avocado slices.
Assemble the Bowls:
- Divide the rice among serving bowls.
- Layer on black beans, corn, shredded lettuce, diced tomatoes, and avocado slices.
- Top with slices of chipotle chicken.
Garnish and Serve:
Sprinkle with shredded cheese and fresh cilantro. Add sliced jalapeños for heat and drizzle with Greek yogurt or chipotle mayo for extra flavor. Serve with lime wedges on the side.
