Chipotle Chicken Burrito Bowl

Ingredients
For the Chipotle Chicken:

  1. 1 lb boneless, skinless chicken breasts or thighs
  2.  2 tsp chipotle chili powder
  3.  1 tsp cumin
  4. 1/2 tsp smoked paprika
  5.  2 cloves garlic, minced
  6. 2 tbsp lime juice
  7.  1 tbsp olive oil

For the Bowl:

  1.  2 cups cooked rice (white, brown, or cilantro-lime rice)
  2.  1/2 cup black beans, rinsed and drained
  3.  1/2 cup roasted or steamed corn
  4.  1/2 cup diced tomatoes or pico de gallo
  5.  1/2 cup shredded lettuce or spinach
  6.  1 avocado, sliced

Optional Garnishes:

  1. 1/4 cup shredded cheddar or Monterey Jack cheese
  2. Sliced jalapeños
  3. Fresh cilantro, chopped
  4. Lime wedges
  5. Greek yogurtor chipotle mayo

Instructions

Marinate and Cook the Chicken:

  1. In a bowl, mix chipotle chili powder, cumin, smoked paprika, minced garlic, lime juice, olive oil, salt, and pepper. Add the chicken and coat evenly. Let marinate for at least 20 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice into strips.

Prepare the Bowl Ingredients:

  1. Cook rice according to package instructions. Add lime juice and chopped cilantro for extra flavor if desired
  2. Roast or steam the corn and prep other toppings like shredded lettuce, diced tomatoes, black beans, and avocado slices.

Assemble the Bowls:

  1. Divide the rice among serving bowls.
  2. Layer on black beans, corn, shredded lettuce, diced tomatoes, and avocado slices.
  3. Top with slices of chipotle chicken.

Garnish and Serve:

Sprinkle with shredded cheese and fresh cilantro. Add sliced jalapeños for heat and drizzle with Greek yogurt  or chipotle mayo for extra flavor. Serve with lime wedges on the side.
