1.2–1.5 kg boneless turkey breast

2 tbsp olive oil

2 tbsp butter, softened

1 tsp salt

½ tsp black pepper

1 tsp paprika

6 cloves garlic, minced

1 tbsp fresh thyme

1 tbsp fresh parsley, chopped

1 tsp lemon zest

1 tsp orange zest

For the Citrus Bed

1 large orange, sliced

1 large lemon, sliced

1 small onion, sliced

½ cup chicken broth

Optional Glaze

2 tbsp honey or maple syrup

1 tbsp orange juice

½ tbsp olive oil

Instructions

1. Prepare the Turkey

Pat the turkey breast dry with paper towels.

In a small bowl, mix together:

thyme

parsley

paprika

salt & pepper

lemon and orange zest

Rub this herb mixture all over the turkey breast, including underneath the skin if possible.

2. Build the Citrus Roasting Base

In a baking dish, layer:

lemon slices

orange slices

onion slices

Place the seasoned turkey breast on top.

Pour ½ cup chicken broth into the dish to keep it moist.

3. Roast

Preheat oven to 190°C (375°F).

Roast the turkey breast uncovered for:

55–75 minutes (until internal temperature reaches 74°C / 165°F).

Baste once halfway through for extra juiciness.

4. Apply the Glaze

Melt together: honey/maple + butter + orange juice.

Brush the turkey during the last 10 minutes of roasting for a glossy finish.
