½ cup croutons
For the Caesar Dressing:
½ cup mayonnaise
¼ cup grated Parmesan cheese
2 tbsp lemon juice
1 tbsp Dijon mustard
1 tsp Worcestershire sauce
1 garlic clove, minced
½ tsp salt
½ tsp black pepper
2 tbsp olive oil
1-2 tbsp water (to adjust consistency)
Instructions
1. Cook the Chicken
Preheat a grill pan or skillet over medium-high heat.
Rub the chicken breasts with olive oil, salt, black pepper, garlic powder, and paprika.
Cook for 5-7 minutes per side until golden brown and cooked through (internal temp: 165°F/75°C).
Remove from heat, let rest for 5 minutes, then slice into thin strips.
2. Cook the Pasta
Bring a large pot of salted water to a boil.
Cook pasta according to package instructions until al dente (8-10 minutes).
Drain and rinse under cold water to cool it down.
3. Make the Caesar Dressing
In a bowl, whisk together mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, Worcestershire sauce, garlic, salt, and black pepper.
Slowly drizzle in olive oil while whisking to emulsify the dressing.
Add water if needed to thin the consistency.
4. Assemble the Salad
In a large bowl, combine cooked pasta, romaine lettuce, cherry tomatoes, and sliced chicken.
Drizzle with Caesar dressing and toss to coat evenly.
Top with croutons and shredded Parmesan cheese.
5. Serve & Enjoy
Serve immediately or refrigerate for up to 2 days for a chilled pasta salad.
Tips & Variations:
