Classic Refreshing Greek Salad

Ingredients:

• 1 Bell pepper, red or green
• 2 cups Cherry tomatoes
• 1 Cucumber
• 1 tsp Oregano, dried
• 1 Parsley, Fresh
• 1/2 Red onion
option: fresh mint

Condiments

• 1 cup Kalamata olives, pitted

Baking & Spices

• 1 Salt and pepper

Oils & Vinegars

• 1/4 cup Olive oil
• 2 tbsp Red wine vinegar

Dairy

• 1 cup Feta cheese

Instructions:

1.Prepare the vegetables:
Slice the cucumber into thick rounds or half-moons.
Cut the tomatoes into wedges or large chunks, depending on your preference.
Thinly slice the red onion and bell pepper.

2. Assemble the salad:
In a large salad bowl, combine the cucumber, tomato, onion, and bell pepper.
Add the Kalamata olives, scattering them over the vegetables.

3.Add the feta:
Place the block of feta cheese on top of the vegetables. Traditionally, the feta is served in a large block rather than crumbled. You can also break it into large chunks if you prefer.

4.Dress the salad:
Drizzle the extra virgin olive oil generously over the salad. If you like a bit of tang, you can add a splash of red wine vinegar as well.
Sprinkle the salad with dried oregano, and season with salt and freshly ground black pepper to taste.

5. Garnish and serve:
Optionally, sprinkle a little fresh chopped parsley (mint) over the salad for added color and flavor.
