Classic Zucchini Slice Recipe
A moist and flavorful savory slice made with grated zucchini, cheese, eggs, and a touch of herbs. Perfect for lunchboxes, brunch, or a healthy snack.

Ingredients:
2 medium zucchinis (about 400–450 g), grated
1 small carrot, grated
1 small onion, finely chopped
3 large eggs
1 cup (120 g) self-raising flour
1/2 cup (50 g) grated Parmesan cheese (or cheddar)
1/4 cup (60 ml) milk
2 tbsp olive oil
1 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano or thyme
Optional: 2–3 tbsp chopped fresh parsley or chives
Instructions:
Preheat oven:
Preheat the oven to 180°C (350°F). Grease a 20×20 cm (8×8 inch) baking dish or line it with parchment paper.
Prepare zucchini:
Grate the zucchini and squeeze out excess water using a clean kitchen towel or paper towels. This prevents the slice from being soggy.
Mix dry ingredients:
In a large bowl, combine self-raising flour, baking powder (if using), salt, pepper, and dried herbs. Stir in the grated cheese.
Cook onions (optional but recommended):
Heat 1 tbsp olive oil in a pan and lightly saute the chopped onion for 2–3 minutes until soft and fragrant. Allow to cool slightly.
Combine wet ingredients:
In another bowl, whisk the eggs, milk, and remaining olive oil.
Mix all together:
Add the zucchini, carrot, sautéed onion, and fresh herbs to the egg mixture. Stir well. Then fold in the dry ingredients until just combined. Don’t overmix.
Bake:
Pour the mixture into the prepared baking dish and smooth the top. Bake for 35–40 minutes, or until golden brown and a skewer inserted into the center comes out clean.
Cool and serve:
Let the slice cool for 5–10 minutes before cutting into squares or rectangles. Serve warm or at room temperature.
Tips:
Cheese variation: Try feta for a Mediterranean twist or mozzarella for extra gooeyness.
Add-ins: Chopped sun-dried tomatoes, olives, or roasted red peppers add flavor.
Storage: Store in an airtight container in the fridge for up to 3 days. Reheat lightly before serving.
