Ingredients

For the Salad:

3 cups elbow macaroni (or shell pasta)

¾ cup chopped dill pickles (about 3-4 pickles)

½ cup diced celery

½ cup diced red onion

¼ cup chopped fresh dill (or 1 tbsp dried dill)

½ cup shredded cheddar cheese (optional, for extra flavor)

¼ cup chopped green onions (optional, for garnish)

For the Dressing:

¾ cup mayonnaise (or Greek yogurt for a lighter version)

2 tbsp pickle juice (from the jar)

1 tbsp yellow mustard (or Dijon mustard for a bolder taste)

1 tsp apple cider vinegar (or white vinegar)

½ tsp garlic powder

½ tsp onion powder

½ tsp salt (adjust to taste)

¼ tsp black pepper

Instructions

Step 1: Cook the Pasta

1. Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions until al dente.

Step 3: Assemble the Salad

4. In a large mixing bowl, combine cooled pasta, chopped pickles, celery, red onion, dill, and shredded cheese (if using).

5. Pour the dressing over the salad and toss until well-coated.

Step 4: Chill & Serve

6. Cover and refrigerate for at least 30 minutes to 1 hour for flavors to meld.

7. Before serving, give it a stir and garnish with green onions or extra dill.
