Ingredients:
- 1 1/4 cups corn (about 2-3 ears)
- 1 jalapeno, seeded and finely diced
- 2 green onions, finely sliced
- 2 tablespoons cilantro, chopped
- 1/2 teaspoon lime zest
- 1 tablespoon lime juice
- 1/3 cup milk
- 1/4 cup mayonnaise (or sour cream)
- 3/4 cup flour (gluten-free for gluten-free)
- 1/2 teaspoon baking powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
4 ounces cotija cheese (or feta), crumbled - Canola oil for frying
For the sauce:
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon lime juice
- Salt and pepper to taste
- Chili powder to taste
Directions:
- In a large bowl, mix together the corn, jalapeno, green onions, cilantro, lime zest, lime juice, milk, and mayonnaise.
- In another bowl, combine the flour, baking powder, chili powder, paprika, salt, and pepper.
- Gradually mix the wet ingredients into the dry ingredients until well combined. Gently fold in the crumbled cheese.
- Heat canola oil in a skillet over medium heat. Drop 1-2 tablespoons of batter per fritter into the oil and fry until each side is lightly golden brown, about 1-2 minutes per side. Drain on paper towels.
- For the sauce, whisk together mayonnaise, sour cream, lime juice, salt, pepper, and chili powder to taste. Serve with fritters.
