Ingredients:

  1. 1 1/4 cups corn (about 2-3 ears)
  2. 1 jalapeno, seeded and finely diced
  3. 2 green onions, finely sliced
  4. 2 tablespoons cilantro, chopped
  5. 1/2 teaspoon lime zest
  6. 1 tablespoon lime juice
  7. 1/3 cup milk
  8. 1/4 cup mayonnaise (or sour cream)
  9. 3/4 cup flour (gluten-free for gluten-free)
  10. 1/2 teaspoon baking powder
  11. 1/2 teaspoon chili powder
  12. 1/2 teaspoon smoked paprika
  13. 1/4 teaspoon salt
  14. 1/4 teaspoon pepper
    4 ounces cotija cheese (or feta), crumbled
  15. Canola oil for frying

For the sauce:

  1. 2 tablespoons mayonnaise
  2. 2 tablespoons sour cream
  3. 1 tablespoon lime juice
  4. Salt and pepper to taste
  5. Chili powder to taste

Directions:

  1. In a large bowl, mix together the corn, jalapeno, green onions, cilantro, lime zest, lime juice, milk, and mayonnaise.
  2. In another bowl, combine the flour, baking powder, chili powder, paprika, salt, and pepper.
  3. Gradually mix the wet ingredients into the dry ingredients until well combined. Gently fold in the crumbled cheese.
  4. Heat canola oil in a skillet over medium heat. Drop 1-2 tablespoons of batter per fritter into the oil and fry until each side is lightly golden brown, about 1-2 minutes per side. Drain on paper towels.
  5. For the sauce, whisk together mayonnaise, sour cream, lime juice, salt, pepper, and chili powder to taste. Serve with fritters.
