Ingredients:

  1. 2 cups corn kernels (fresh, frozen, or canned)
  2. 1-2 avocados diced
  3. 1 cup cherry or grape tomatoes  halved
  4. 1/4 red onion  thinly sliced
  5. Juice of 1 lime
  6. 2 tablespoons olive oil
  7. Salt  and black pepper to taste
  8. Fresh cilantro  chopped (optional)

Instructions:

  1. Prepare the Ingredients:If using fresh corn, cook it by boiling for 3-5 minutes, then cool. If using frozen or canned, rinse and drain.
  2. Combine the Salad:In a large bowl, mix together corn kernels, diced avocados  halved tomatoes, and red onion slices
  3. Make the Dressing:In a small bowl, whisk together lime juice , olive oil  salt and black pepper. Adjust seasoning to taste.
  4. Mix Everything Together:Pour the dressing over the salad and toss gently to combine, making sure the avocado is coated well.
