Servings: 4–6 flat breads

Ingredients

1 cup cottage cheese (small curd)

1 ½ cups all-purpose or whole wheat flour (plus extra for dusting)

1 teaspoon baking powder

½ teaspoon salt

1 egg

1 tablespoon olive oil or melted butter

2 tablespoons milk or water (if needed, for consistency)

Optional Additions:

½ teaspoon garlic powder or onion powder (for extra flavor)

½ teaspoon dried oregano, thyme, or basil

1 tablespoon sesame seeds or flaxseeds (for texture)

Instructions

Step 1: Prepare the Dough

1. In a large mixing bowl, combine the cottage cheese, egg, and olive oil. Mix well until smooth.

2. In a separate bowl, whisk together the flour, baking powder, and salt.

3. Gradually add the dry ingredients to the cottage cheese mixture, stirring with a spoon or hands until a dough forms.

4. If the dough is too dry, add 1–2 tablespoons of milk or water. If it’s too sticky, add a little more flour.

5. Knead the dough on a lightly floured surface for 2–3 minutes until smooth.

6. Cover with a clean towel and let it rest for 15 minutes (optional, but helps with texture).

Step 2: Roll Out the Flat breads

7. Divide the dough into 4–6 equal portions and roll each piece into a ball.

8. Using a rolling pin, flatten each ball into a thin round or oval shape, about ¼ inch thick.

Step 3: Cook the Flat breads

9. Heat a non-stick skillet or cast-iron pan over medium heat.

10. Cook each flatbread for 2–3 minutes on one side until bubbles form and the bottom is golden brown.

11. Flip and cook for another 1–2 minutes on the other side.

12. Repeat with the remaining dough, adjusting heat as needed.

Step 4: Serve & Enjoy

13. Serve warm with butter, spreads, or as a side for soups, curries, or dips.
