Ingredients
1 cup cornmeal (medium grind)

2 large eggs

Instructions:
1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.
2. In a bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
3. In another bowl, mix eggs, cottage cheese, milk, olive oil, and honey until smooth.
4. Stir the wet ingredients into the dry mixture until just combined.
5. Fold in jalapeños and corn kernels (and cheese if using).
6. Spoon batter into muffin cups, filling about 3/4 full.
7. Bake 18–22 minutes, or until a toothpick comes out clean and tops are golden.
8. Let cool in the pan for 5 minutes, then transfer to a wire rack.
