Ingredients
• 2 cups pasta (such as penne or shells)
• 2 cups broccoli florets
• 2 cups cooked chicken breast, diced
• 2 tablespoons olive oil
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 2 tablespoons all-purpose flour
• 2 cups milk
• 1 cup chicken broth
• 1 cup shredded mozzarella cheese
• 1/2 cup grated Parmesan cheese
• Salt and pepper to taste
• 1/2 teaspoon dried thyme
• 1/2 teaspoon dried basil
• 2 tablespoons chopped fresh parsley, for garnish
Instructions
1. Set your oven to 375°F (190°C) and lightly grease a large baking dish.
2. In a large pot of salted boiling water, cook the pasta according to the package directions until al dente.
3. Add the broccoli florets in the last 3 minutes of cooking. Drain well and set aside.
4. Heat olive oil in a large skillet over medium heat.
5. Add chopped onion and garlic, sauteing until the onion becomes translucent. Sprinkle in flour and mix well. Gradually whisk in milk and chicken broth, stirring constantly until the sauce thickens.
