Ingredients

For the Casserole:

2 cups cooked white or brown rice (or use a microwave pouch)

2 cups cooked chicken breast, shredded or chopped

1½ cups broccoli florets (optional, lightly steamed or thawed if frozen)

1½ cups shredded mozzarella or provolone

½ cup grated parmesan cheese

Salt & black pepper, to taste

For the Alfredo Sauce:

2 tbsp olive oil

2 cloves garlic, minced

2 tbsp all-purpose flour

1½ cups whole milk (or half-and-half)

½ cup heavy cream

½ cup grated parmesan

Pinch of nutmeg (optional)

Salt & pepper, to taste

Instructions

1. Make the Alfredo Sauce

In a saucepan, put olive oil and heat.

Add garlic and sauté 30 seconds.

Stir in flour and cook 1 minute to form a roux.

Slowly whisk in milk and cream until smooth.

Simmer for 4–5 minutes until thickened slightly.

Stir in parmesan, nutmeg (if using), salt, and pepper. Remove from heat.

2. Assemble the Casserole

Preheat oven to 375°F (190°C).

In a large bowl, combine cooked rice, chicken, broccoli (if using), 1 cup mozzarella, and Alfredo sauce. Mix well.

Season with salt and pepper if needed.

Transfer to a greased 9×13-inch baking dish.

Top with remaining ½ cup mozzarella and extra parmesan.

3. Bake

Bake uncovered for 25–30 minutes, until bubbly and golden on top.

Optional: Broil for 2–3 minutes for a golden crust.

4. Serve

Let rest for 5 minutes before serving.

Garnish with fresh parsley or basil, if desired.
