For the Creamy Mushroom Sauce:
1 tablespoon olive oil
8 ounces mushrooms, sliced (white button or cremini)
3 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon thyme or Italian seasoning
1 cup heavy cream (or substitute with half-and-half for a lighter version)
½ cup chicken broth
½ cup Parmesan cheese, grated
1 teaspoon Dijon mustard (adds depth of flavor, optional)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions:
Step 1: Prepare the Chicken
Season the Chicken: Pat the chicken breasts dry with paper towels. Sprinkle both sides with salt, pepper, garlic powder, and paprika.
Sear the Chicken: Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes per side, until golden brown. Remove and set aside.
Step 2: Make the Mushroom Sauce
Sauté the Mushrooms: In the same skillet, melt 1 tablespoon of butter. Add the sliced mushrooms and cook for 4-5 minutes until softened.
Add Garlic & Seasoning: Stir in the minced garlic, salt, pepper, and thyme. Cook for another 1-2 minutes until fragrant.
Deglaze with Chicken Broth: Pour in the chicken broth, scraping up any browned bits from the pan. Simmer for 2 minutes to reduce slightly.
Add the Cream & Parmesan: Stir in the heavy cream, Dijon mustard (if using), and Parmes
an cheese. Let simmer for 3-4 minutes until thickened.
