 Creamy Chicken with Mushrooms 

Mediterranean Creamy Chicken with Mushrooms is a rich, flavorful dish that combines tender chicken breasts with earthy mushrooms in a creamy, garlic-infused sauce. This dish is elevated with Mediterranean ingredients like sun-dried tomatoes, fresh herbs, and a touch of lemon for brightness. It’s a comforting yet elegant meal, perfect for a weeknight dinner or a special occasion.

Ingredients:

4 boneless, skinless chicken breasts

1 cup mushrooms, sliced (button or cremini)

1 cup low fat cream

1/2 cup chicken broth

3 garlic cloves, minced

1/4 cup sun-dried tomatoes (optional), chopped

1 tbsp olive oil

1 tsp dried oregano

1 tsp dried thyme

Juice of half a lemon

Fresh parsley, chopped (for garnish)

Salt and pepper to taste

Instructions:

Season chicken breasts with salt, pepper, oregano, and thyme.

Heat olive oil  in a large skillet over medium heat. Add the chicken breasts and sear for 4-5 minutes per side until golden brown. Remove and set aside.

In the same skillet, add mushrooms and garlic. Saute until mushrooms are tender and golden.

Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.

Stir in low fat cream, sun-dried tomatoes, and lemon juice. Let the sauce simmer for 3-5 minutes, thickening slightly.

Return the chicken breasts to the skillet, coating them in the sauce. Cook for another 5-7 minutes or until the chicken is cooked through.

Garnish with fresh parsley and serve hot.

Notes:

You can substitute half-and-half for heavy cream if you prefer a lighter sauce.

For added richness, stir in a tablespoon of grated Parmesan cheese to the sauce.

Feel free to swap sun-dried tomatoes for fresh cherry tomatoes or roasted red peppers.

This dish pairs well with rice, mashed potatoes, or a side of roasted vegetables.

For a lower-carb version, serve with cauliflower rice or zucchini noodles.
