Creamy COLESLAW recipe

This taste like KFC coleslaw to me. It’s creamy and tangy. Just the way I love it.

This simple coleslaw recipe works well for a BBQ on July 4th, a weeknight supper, or a fun picnic lunch. It’s loaded with vibrant vegetables, just like all my favourite summer recipes, and it’s all brought together by a sauce that’s just slightly creamy and tart. It comes together quickly and, if prepared ahead of time, keeps well. A simple addition of vegetarian burgers makes this the ideal summertime supper!

Making a perfect-sized amount of homemade coleslaw in 5 minutes beats buying a large tub with an inconveniently short expiration date.
Delicious as a side dish for summertime cookouts and leisurely lunches, or as a garnish for crispy chicken burgers.

How to cut the vegetables

I like to use a mandoline to evenly cut the cabbage and carrots.
You can use a food processor with a julienne disc, or you could slice them thinly with a knife or use a hand julienne peeler if you prefer.

Shortcut suggestion:

The grocer sells chopped, bagged vegetables for coleslaw. Since they frequently included red onion and red cabbage in the pre-cut mixes, the outcome will be slightly different. They typically also include a mayonnaise sachet.
For added flavour, you can combine these pre-cut vegetables with my recipe’s coleslaw sauce.

For the Coleslaw:

 

  1. 4 cups finely chopped (half cabbage)
  2. 1/4 cup shredded carrot
  3. For the Dressing:
  4. 1/2 cup mayonnaise
  5. 2 tbsp honey/sugar
  6. 2 tbsp buttermilk
  7. 1 tbsp vinegar/lemon juice
  8. Salt and pepper to taste

Steps:

  1. Shred the cabbage and carrots. Or chop in food processor. Set a side.
  2. In a large bowl, combine all the ingredients for the dressing. Whisk until smooth.
  3. Add in cabbage and carrots. Mix well until everything is thoroughly combined. Add salt and pepper to taste.
  4. Cover and refrigerate overnight. Or eat it right away.
