12 oz (340 g) cheese tortellini

1 large avocado, diced

½ cup crumbled feta cheese

1 cup cherry tomatoes, halved

½ cucumber, diced

¼ red onion, thinly sliced

¼ cup Kalamata olives, pitted and halved

2 tbsp toasted pine nuts

For the Creamy Herb Dressing

½ cup Greek yogurt

3 tbsp olive oil

2 tbsp lemon juice

2 tbsp fresh parsley, chopped

1 tbsp fresh dill, chopped

1 tbsp fresh basil, chopped

1 clove garlic, minced

Salt & black pepper, to taste

Instructions

Step 1: Cook the Tortellini

Bring a pot of salted water to a boil.

Cook tortellini according to package directions (usually 3–4 minutes until they float).

Drain and rinse with cold water to cool.

Step 2: Make the Creamy Herb Dressing

In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, parsley, dill, basil, and garlic.

Step 3: Assemble the Salad

In a large bowl, combine cooled tortellini, avocado, feta, cherry tomatoes, cucumber, red onion, and olives.
