Creamy Garlic Chicken with Baby Potatoes & Sauteed Veggies
Golden pan-seared chicken cooked in a silky garlic cream sauce, served with tender baby potatoes and colorful sauteed vegetables. A perfect, comforting one-pan style meal.

Ingredients
For the Creamy Garlic Chicken
500 g chicken breasts or thighs
1 tbsp olive oil
4–5 garlic cloves, minced
1/2 cup chicken broth
1/2 cup heavy cream OR Greek yogurt (lighter)
1/4 cup grated Parmesan
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
Optional: squeeze of lemon for freshness
For the Baby Potatoes
2 cups baby potatoes, halved
1 tbsp olive oil
Salt & pepper
1/2 tsp paprika
1/2 tsp dried rosemary or thyme
For the Sauteed Veggies
1 cup broccoli florets
1 bell pepper (red or yellow), sliced
1 small carrot, sliced
1 small onion, sliced
1 tbsp olive oil
Salt & pepper to taste
Instructions
1. Cook the baby potatoes
Boil the halved baby potatoes in salted water for 10–12 minutes or until fork-tender.
Drain, toss with olive oil, salt, pepper, and rosemary.
Set aside (you can lightly pan-sear them for extra crispiness if you want).
2. Cook the chicken
Season chicken with salt, pepper, oregano, and thyme.
Heat 1 tbsp olive oil + 1 tbsp butter in a pan.
Sear chicken 4–5 minutes per side until golden.
Remove and set aside.
3. Make the creamy garlic sauce
In the same pan, add garlic and sauté for 30 seconds.
Add chicken broth and scrape brown bits from the pan.
Pour in cream (or Greek yogurt) and stir.
Add Parmesan (if using) for extra richness.
Simmer 2–3 minutes until the sauce thickens.
Return chicken to the pan and coat in the sauce.
Simmer 3–4 minutes until chicken is fully cooked and juicy.
4. Saute the veggies
In a separate pan, heat 1 tbsp olive oil.
Add onion, broccoli, carrots, and bell peppers.
Cook 4–5 minutes until slightly soft but still crisp.
Season with salt and pepper.
5. Serve
Plate the creamy garlic chicken with:
a generous spoon of creamy sauce

Garnish with:
chopped parsley
lemon zest
extra parmesan

Extra creamy sauce: Add 1 spoon cream cheese.
