Ingredients
For the Chicken
2 chicken breasts, sliced
1 tbsp olive oil
1 tsp garlic powder
½ tsp dried oregano
½ tsp dried basil
½ tsp paprika
Salt & pepper
1 tbsp lemon juice
For the Roasted Potatoes
2 medium potatoes, cubed
1 tbsp olive oil
½ tsp paprika
½ tsp dried rosemary or oregano
Salt & pepper
For the Creamy Herb Penne
200g penne pasta
1 tbsp olive oil
2–3 garlic cloves, minced
½ cup cream or half-and-half
¼ cup pasta water
¼ cup parmesan cheese
½ tsp dried basil
½ tsp dried oregano
Salt & pepper
Optional: handful of spinach
For the Cherry Tomatoes
1 cup cherry tomatoes
1 tsp olive oil
Salt & pepper
Optional: pinch of dried rosemary
Instructions
1. Roast the Potatoes
Preheat oven to 220°C (425°F).
Toss potato cubes with olive oil, paprika, rosemary, salt & pepper.
Spread on a baking tray and roast 20–25 minutes, until crispy.
2. Cook the Cherry Tomatoes
Place tomatoes on a small foil sheet.
Drizzle olive oil, add salt & pepper.
Bake in oven for 10–12 minutes until they soften and burst.
3. Cook the Chicken
Season chicken with garlic powder, oregano, basil, paprika, salt, pepper, and lemon juice.
Heat oil in a pan and cook chicken 5–6 minutes until golden and fully cooked.
Remove and set aside.
4. Make the Creamy Herb Penne
Cook penne in salted water; reserve ¼ cup pasta water.
In a pan, melt butter.
Add garlic and saute for 30 seconds.
Add cream, pasta water, basil, oregano, salt, and pepper.
Stir and simmer 2 minutes.
Add parmesan and mix until creamy.
Toss penne in the sauce.
(Optional) Add spinach to wilt into the sauce.
5. Assemble the Bowl
Add a hearty scoop of creamy herb penne.
Top with grilled herb chicken.
Add a side of crispy roasted potatoes.
Finish with burst cherry tomatoes.
Drizzle a little olive oil or sprinkle extra parmesan if desired.
