Ingredients

12 oz spaghetti (or fettuccine, linguine)
1 tbsp salt (for boiling water)
For the Creamy Mushroom Sauce:
1 tbsp olive oil
8 oz cremini or button mushrooms, sliced
3 cloves garlic, minced
½ tsp salt (or to taste)
¼ tsp black pepper
½ tsp dried thyme (or 1 tsp fresh)
½ cup vegetable or chicken broth

Instructions
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente.Reserve ½ cup of pasta water, then drain and set aside.
2. Saute the Mushrooms:

3. Add Garlic & Seasonings:
Stir in the minced garlic, salt, black pepper, and thyme. Cook for 1 minute until fragrant.
4. Make the Creamy Sauce:
Pour in the broth and let it simmer for 2 minutes, reducing slightly.Add the heavy cream and bring to a gentle simmer for 2-3 minutes, allowing the flavors to blend.
5. Melt the Cheese & Combine:
Stir in the grated Parmesan cheese and red pepper flakes (if using). Let the sauce thicken slightly.Add the cooked spaghetti and toss to coat. If the sauce is too thick, add reserved pasta water 1 tbsp at a time until desired consistency is reached.
6. Serve & Garnish:
Remove from heat and sprinkle with fresh parsley.Serve hot with extra Parmesan and black pepper.
